Gluten

A protein found in wheat, rye, and barley. If you are one who is susceptible, it can have drastic effects on your body and may damage your body for years while you consume it. Don’t be afraid to test for this allergy or try a short elimination diet. It could make all the difference in the world. Many studies are linking this protein to a large number of ailments. Your doctor should be able to look these up for you.

About this site 

This site is not designed to complain about how bad a particular company is doing for your food allergy. It is designed to do one thing, inform on how well a company handles a food allergy. I invite any company not happy with what they see online to follow up on it. In another words please take advantage of the free secret shopper service provided by this website. Why do I do it?

Simple. I just want to be able to eat socially with friends and family. I truly do not believe it is too much to ask. I believe after researching you will think the same simply because we have the same goals. Foods that are made for shelf life are not designed for health. Foods that have ingredients labeled ‘Natural Ingreediets’ are specifically hiding ingredients that you probably do not want to eat if you knew what they were. Food labels should contain everything that may be in them even if it is not ‘designed’ to be part of the final product. The highly guarded food coloring industry is the hardest one of all to find out what is inside. Even pharmacists that have no clue what else is in the medicines they dispense besides the medicine itself have an easier time researching those ingredients than what can be gleaned from the food coloring industry.

All of these practices make it extremely difficult to determine what is safe. In 2007 it is still ok to label a product gluten free in the United States even if it contains gluten because of the above problems.

After I started asking questions I find that overall I am disappointed in the whole supply chain.

So who is good and who can I trust?

There are a few companies that I am impressed with. Disney in Florida is one of them. Bumblebar in Washington is another. I am not affiliated with any of these companies at this time.

So who can you trust? Read and research. Try to avoid kook-talk and learn from other people’s experiences. (I hope there isn’t much of that kook-talk here. If so then it is good for a laugh, right?) Most of all experience and trust in yourself.
